Caribbean Tea

Ingredients: 1 cup hot tea 1/2 finger Malibu coconut rum Brown sugar to taste
Directions: Make one cup of hot tea. Pour in some Malibu. Add sugar to taste. The Malibu is quite sweet, so you'll need less sugar than you normally take. My experience shows that very few people (particularly cafés and restaurants) actually know how to make tea, so here follow some instructions on that difficult process. Good tea is made by pouring boiling water over tea leaves and letting it draw for 3-5 minutes. You will never get a good cup of tea by plonking a tea bag into a mug of luke warm water. NEVER! OK?
Comments: This may sound unlikely, but try it, and chances are you'll be hooked. This is my own invention and happened by accident. I like a dash of rum in my tea, but one day I was out of rum, so I tried Malibu. The result is coconut flavoured tea with a hint of rum taste. Very nice.
Cape Horn Pisco Sours

Ingredients: 1 bottle Pisco (750 ml) 12 lemons 2 cups sugar (approx.)
Directions: Makes about 10 drinks. Squeeze lemons to generate about 4 cups lemon juice. Mix sugar into lemon juice. You can’t use too much sugar; just keep adding until no more will go into solution. Extract egg white from egg. Mix whole bottle of Pisco in cocktail shaker and whip with whisk. Mix in the lemon/sugar solution. Shake well and serve straight up or over ice. Note: Best consumed sitting down.
Comments: Pisco is a brandy or 'aguardiente' distilled from the white muscat grapes grown in two main regions of South America: the area around Pisco and the Valle del Río Elqui in central Chile. The Elqui Valley is called the "zona pisquera" due to its favorable geographic and climatic conditions and is the only pisco producing area in Chile. This Recipe "evolved" aboard Skip Novak's Pelagic Australis after dropping anchor in the kelp fields NE of Cape Horn after a rough passage across the Drake Passage from Antarctica.

Directions: Combine vodka, grand marnier & juices. Pour over ice. Add a splash of grenadine.

Ingredients: 6 oz Cranberry Vodka 1 tsp lime juice l3 oz Grand Marnier Lime Slices
Directions: Fill a martini shaker with ice. Add the vodka, lime juice and Grand Marnier and shake gently. Pout into martini glasses. Garnish with lime slices.
Comments: Experiment! There are other wonderful flavored vodkas like vanilla and various citrus flavors!

Ingredients: Lime Juice Salt or Sugar For Rim Juice of 1 1/2 Limes 2 Shots Tequila 1 Shot Vodka Splash of Triple Sec 2 Cups Chopped & Seeded Watermelon 1/4 Cup Sugar 4 Cups Ice
Directions: Coat the rims of 4 glasses with lime juice. Dip the rims in salt or sugar or both. Combine the juice of 1 1/2 limes, tequila, vodka, triple sec, watermelon, sugar and 3 cups of ice in blender. Process until smooth. Add the remaining 1 cup ice. Process until slushy.

Ingredients: 6 packets sugar (I prefer Sugar in the Raw) ~ 1/4 cup hot water 1/2 cup lime juice ~ 16 fresh mint leaves 1 cup ginger ale 1 1/3 cup white rum (Bacardi) Extra mint leaves and lime wedges
Directions: Empty the sugar packets into a measuring cup. Add enough hot water to make 1/4 cup. Stir to dissolve the sugar. Pour the sugar syrup into a serving pitcher. Place the mint leaves into a mortar. Add lime juice and muddle (smash the heck out of it with the pestle). Strain the lime/mint juice into the serving pitcher. Add ginger ale and rum to serving pitcher. Stir. Serve over ice. Garnish with lime wedges and mint leaves. Drink!
Comments: The Mojito is a very refreshing lime and mint flavored rum drink that comes from Cuba. I received this recipe from a Puerto Rican, so I guess it is pretty close to the real thing.

Ingredients: 2 1/2 cups sugar 1 1/2 cups cocoa  1 to 2 tsp of cinnamon 1/8 tsp salt 1 tsp powder vanilla (optional) 1/8 cayenne pepper (optional)  
Directions: Mix by hand all dry ingredients Heat 8 oz of milk. When vapors rise, stir into milk 3 heaping tsp of mix. Enjoy

Ingredients: Bourbon (your choice) Angostura Bitters (original or orange) Habanero Rich Syrup (Agave Syrup and 2 habaneros) Orange (for the peel only) Cubed ice Shaker
Directions: Habanero Rich Syrup: Empty the entire contents of a squeeze bottle of agave syrup into a sauce pan. Chop up a couple of habaneros and toss 'em in. Bring to a simmer, and taste occasionally. When it's hot enough for you, remove from heat and allow to cool. Using a small funnel and screen strainer, pour the syrup back into the bottle, filtering out the habanero chunks and seeds. The Cocktail: Put 4-5 ice cubes into the shaker, with: 2 oz. bourbon 3/4 oz. habanero syrup 4 or 5 shakes of bitters Shake for 30 seconds. Strain over new ice cubes into your favorite highball glass. Garnish with a twist of orange peel. Baccashaa!!!
Comments: If you like a good Old Fashioned, and you like things a little spicy, you're gonna love this one! We got the recipe from Ludo, the amazing bartender at The Palapa Grill in Sint Maarten. She makes her rich syrup with sugar (2 cups sugar, 1 cup water, boil to dissolve the sugar, then chill), but we found it easier, and a tad healthier, to use agave syrup. And she would NEVER make one with just any old bourbon! But we've found that it's delicious even with the cheap stuff.
