Spicy Spinach with Eggs

Ingredients: 2 tbsp olive oil 1 onion,diced 2 cloves garlic, crushed 1 large tomato, diced 1 tsp grainy mustard 1/4 tsp chilli powder 1/4 tsp cinnamon 1/4 tsp salt 4 eggs 1 bag baby leaf spinach freshly ground black pepper 1 tbsp fresh cilantro, chopped
Directions: Heat the olive oil in a frying pan and cook the onion until softened. Add the garlic and tomatoes and cook for a further 2 or 3 minutes. Stir in the mustard and sprinkle over the salt, chilli and cinnamon. Cook for another 2 minutes. Pack in the spinach and cover with the pan lid. Cook over a medium heat until the spinach has started to wilt. DO NOT ADD ANY WATER or the spinach will become a soggy mess! You will have to stir a couple of times to ensure even cooking. Make 4 hollows in the mixture and break an egg into each hollow. Cover and cook for about 10 minutes until the eggs are cooked but the yolks still soft. Sprinkle with freshly ground black pepper and ciliantro. Lift onto a plate and serve as it is or with warm, buttery bread if not counting carbs!
Comments: This recipe is suitable as either an appetizer for 4 or as a breakfast or light lunch for 2. It is a traditional eastern Indian recipe and great if you are on a low-carb diet!
Baked Oatmeal

Ingredients: 3 C oatmeal 1 C milk 1/2 C melted butter, cooled 1 C brown sugar 2 eggs 1 t salt 2 t baking powder 1/2 to 3/4 t cinnamon 1 t vanilla 1/2 C - 1 raisins, blueberries or dried cranberries 1/2 C chopped nuts
Directions: 1. Preheat oven to 350. Grease an 8 inch baking dish.

2. In large bowl, lightly beat the eggs and mix together with butter, brown sugar and vanilla. Stir in dry ingredients, except nuts. Gently blend the milk. Pour into dish and sprinkle with nuts.

3. Bake 20 - 25 minutes until firm in the center. Cut into 9 squares, will be crumbly.
Comments: Delicious warm or at room temperature. Great to make the day before serving. Keeps for several days at room temperature.

Ingredients: 2 C rolled oats 1 C steel cut oats (or rolled oats) 3 C boiling water 3 medium apples 2 medium bananas 1 C raisins, craisins or other dried fruit 1/2 C milk, plant milk or water 6 T maple syrup 1 T cinnamon 1 1/2 T vegetable oil  1 t vanilla 1/2 t salt 1 C walnuts
Directions: Put oats in a large heat proof bowl. Add boiling water, stir, cover and let stand 15 minutes. Preheat oven to 350. Spray a 9 x 9 dish with PAM or grease lightly. Peel apples, chop nuts, mash bananas and stir into oatmeal. Add remaining ingredients, except nuts. Mix well, pour into prepared pan and sprinkle nuts evenly over the top. Bake for 45 minutes until golden brown. It can be cut into squares for serving. Serve hot or cold. Optional: 1. Use 1/4 C packed brown sugar instead of syrup. 2. Add 1/4 t baking soda and 1/2 t baking powder. 3. Mix 1 T sugar and 1/2 t cinnamon with nuts. 
Comments: This recipe is gluten free, low fat and also vegan, if plant milk or water is used. It is a compilation of recipes explored on several vegan websites and served to a friend who prefers vegan foods. It is a healthier version of traditional Amish-style baked oatmeal. We will make it on board again!

Ingredients: 3 eggs, beaten, room temp 1/2 C bread flour 1/C milk, room temp 1 T sugar 1/2 t cinnamon 4 T butter, room temp Syrup, jam, honey, confectioners' sugar, lemon and sugar or cinnamon sugar.
Directions: Put butter in stoneware pie plate and put into a cold oven. Heat to 425. Combine eggs, flour, milk, sugar and cinnamon in a blender and mix until smooth. Or mix by hand. As soon as the butter melts and starts to sizzle, pour batter into the pie plate. Return to oven and bake for 18 minutes. Turn off oven and let it coast for 6 more minutes. Cut into 4 - 6 wedges and serve immediately. Batter can be made the night before, refrigerated, then brought to room temperature before baking. Some notes at NYT say 400 is better.
