Ingredients: 2 C rolled oats
1 C steel cut oats (or rolled oats)
3 C boiling water
3 medium apples
2 medium bananas
1 C raisins, craisins or other dried fruit
1/2 C milk, plant milk or water
6 T maple syrup
1 T cinnamon
1 1/2 T vegetable oil
1 t vanilla
1/2 t salt
1 C walnuts
Directions: Put oats in a large heat proof bowl. Add boiling water, stir, cover and let stand 15 minutes.
Preheat oven to 350. Spray a 9 x 9 dish with PAM or grease lightly. Peel apples, chop nuts, mash bananas and stir into oatmeal. Add remaining ingredients, except nuts. Mix well, pour into prepared pan and sprinkle nuts evenly over the top.
Bake for 45 minutes until golden brown. It can be cut into squares for serving. Serve hot or cold.
Optional: 1. Use 1/4 C packed brown sugar instead of syrup. 2. Add 1/4 t baking soda and 1/2 t baking powder. 3. Mix 1 T sugar and 1/2 t cinnamon with nuts.

Ingredients: 3 eggs, beaten, room temp
1/2 C bread flour
1/C milk, room temp
1 T sugar
1/2 t cinnamon
4 T butter, room temp
Syrup, jam, honey, confectioners' sugar, lemon and sugar or cinnamon sugar.
Directions: Put butter in stoneware pie plate and put into a cold oven. Heat to 425.
Combine eggs, flour, milk, sugar and cinnamon in a blender and mix until smooth. Or mix by hand.
As soon as the butter melts and starts to sizzle, pour batter into the pie plate. Return to oven and bake for 18 minutes. Turn off oven and let it coast for 6 more minutes. Cut into 4 - 6 wedges and serve immediately.
Batter can be made the night before, refrigerated, then brought to room temperature before baking. Some notes at NYT say 400 is better.
