Ingredients: 1 C butter, softened
3/4 C white sugar
1 C brown sugar
1 egg, plus 1 yolk
2 1/2 C flour
3/4 t baking soda
3/4 t salt
1 T vanilla (yes, tablespoon)
1 t coconut extract
2 C chocolate chips
2 C shredded coconut, toasted
1/2 - 1/3 C macadamia nuts, coarsely chopped
Directions: Preheat oven to 350. In a small bowl, stir together flour, baking soda, and salt and set aside. In a large bowl, cream together butter and sugars. Beat in egg and yolk. Add vanilla and coconut extract. With mixer on low, add flour mixture gradually until combined. By hand, stir in chips, coconut, and nuts.
Roll into small balls and bake on greased or non-stick pans for 9 - 10 minutes until slightly golden.
